- 1/2 brown onion
- 1 tomato
- 1 tablespoon olive oil
- 2-3pinches Italian herbs
- 2 tablespoons water
- Salt & pepper to season
- 3 eggs
- Peel onion and slice into 1 cm thick slices.
- Slice tomato into same thickness.
- Heat oil in a frypan and add onion slices. Cook on medium heat until soft and golden
- Push onions to one side of the pan and then add the individual slices of tomato. Turn up the heat to medium high.
- Sprinkle tomato with salt, pepper and Italian herbs. Fry for 2-3 minutes then flip tomatoes.
- Add 2 Tbs of water to the pan and let the tomato simmer.
- When most of the water is evaporated smash up the tomato and mix with the onion.
- Crack 3 eggs into the pan and sprinkle with salt and pepper then mix the eggs tomato and onion together until the eggs are cooked.
- Eat by itself or serve with toast.
